Cranberry White Chocolate Cookies
|
Ingredients
1 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 (10 to 12-ounce) package (2 cups) white baking chips
1 cup sweetened dried cranberries
extra white baking chips for glaze (optional)
Directions
Preheat oven to 350 degrees.
Line cookie sheets with parchment paper. Set aside.
Combine butter, brown sugar, sugar, eggs and vanilla in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Reduce speed to low; add flour, baking soda and salt; beat until well mixed. Stir in baking chips and cranberries by hand.
Drop dough by rounded tablespoonfuls, 2 inches apart, onto parchment-lined cookie sheets.
Bake for 12 to 14 minutes or until light brown. Cool completely on parchment paper.
(Makes 30 cookies)
OPTIONAL: You can drizzle more melted white chocolate chips over the top in a zig-zag pattern, if desired.
